Made with our rare breed, free range pork, the cheeks are cured for 5-6 months with coriander seeds, juniper berries, salt and black pepper.

Aromatic, and quietly complex, with a slight sweetness. A traditional ingredient for carbonara, or try a few thin slices warmed through over seasonal vegetables.

A small amount is now available.

Ingredients: Free-range pork 92.08%, salt, brown sugar, black pepper, fennel, coriander, juniper berries, thyme, garlic, preservative (sodium nitrite). 125g of pork is used to produce 100g of finished product.

Once opened keep in an airtight container in the fridge and consume within 4 weeks.
