Our Wild Venison Bresaola is handcrafted from wild deer harvested on Wass Farm and the surrounding countryside. Cured in a little red wine, then air dried for approximately 5 months, to create a charcuterie of exceptional depth and elegance. Lean, tender, and intensely flavourful, it offers delicate notes of game, herbs and subtle sweetness.
Using venison sourced from the landscape we know, allows us to create a product that truly reflects it’s place of origin. Every piece is prepared with care and patience, allowing the quality of the ingredient to shine through.
